ROASTED ACORN SQUASH WITH THYME
Ingredients
- 2 acorn squash, seeded and quartered
- 1 tbsp extra-virgin olive oil
- 1 1⁄2 tbsp fresh thyme leaves, chopped
- 1⁄2 tsp sea or kosher salt, or to taste, divided
- 1⁄4 tsp black pepper, freshly ground, or to taste
Directions
Preheat oven to 400 degrees F (205 degrees C). Lightly grease a rimmed baking sheet with olive oil.
Place squash pieces skin side down on the prepared pan. Brush with olive oil, then season with thyme, half of the sea or kosher salt, and black pepper.
Roast for 40 to 45 minutes or until the squash is tender. Remove from the oven and season with remaining 1/4 teaspoon sea or kosher salt and additional black pepper, if desired.
